THE COOK’S TAKE

The process Verge Editor Stacy Smith took to make this week’s recipe

I didn’t realize when I started to make a calzone for the first time it would be such a battle. But I love pizza and the concept of one tucked in dough sounded appetizing.

I went and bought all the necessary ingredients, brought them home and went to it. The pre-made dough wasn’ t as easy to flatten as I thought.

I tried rolling it into different directions but wasn’t sure what kind of pattern to make.

I started squishing the dough together – which was a big mistake. Now all I had was a big ball of dough. I decided to use a cup to flatten it. Wishing I stuck with the original shape, it took forever to roll out. Then I couldn’t figure out whether to follow the instructions and bake the dough for six minutes before putting in toppings, or just put it in before baking.

I decided to follow the instructions, which was not the brightest idea. It was hard to fold the dough over since it was partially cooked. So I ended up squishing it down, adding the toppings and baking until the cheese melted. Next time I know to put the toppings in before I bake the dough. It was a challenge, but delicious.
